Classic cocktails have survived decades. And they come from the old bartenders who had little variety at the bar, and it was up to them to improvise with what they had at hand. They are the basis of modern drinks: the inspiration for which we then create signature cocktails.
Classic cocktails have lasted for generations, with exact and traditional formulas and techniques. They are drinks with a flavor of ancient history, bloody periods and with touches of eternal flavors.

William Cunnington (English), arrives in India (of the Indians), for geological reasons and realizes that the local people had a very stimulating natural beverage with digestive properties. Its main ingredient: quinine extract, which is extracted from the bark of the cinchona tree.
The Londoner returns to his homeland and brings with him this ingredient, from the sacred lands, and makes it his own. The difference: he adds carbonated water.

We can identify the origin of Spritz in the Northeast of Italy at the end of the 19th century, a territory that at that time was still under the control of the Astro-Hungarian Empire. The term 'Spritz' comes from the Austrian-German word 'spritzen', which means to sprinkle, just the gesture of diluting the drink with soda water.
Austrian soldiers stationed in that region were not used to the robust wines of Italy and began to order their wines with a dash - in German, a spritz - of water to soften them.
And so it begins: the combination of wine (most commonly white) and soda. No sparkling wine, no bitters and - although it is hard to imagine - no ice.

The chronological order is as follows: classic cocktails come first, followed by signature cocktails. The latter are influenced and inspired by the former, blending flavors and artisan techniques with the modernization and evolution of contemporary tastes.
Signature cocktails aim to translate a brand's style into a unique drink that bears its own distinctive mark. For us, this means mixing aged liquors that have stood the test of time with aromas and flavors that bring us back to the present moment. It's like embarking on a journey through time.

Sake comes from rice. It's quite fascinating, isn't it? This beverage is considered sacred in Japan and has been consumed by Japanese royalty, samurais, geishas, and monks for many years.
Today, it's enjoyed worldwide. Sake is made from just two ingredients: polished rice and water, and its fermentation process is aided by the koji mushroom. It's believed that sake dates back to the 3rd century, and now, 18 centuries later, you're reading about it.

Mayáhuel is the Mexican goddess of Maguey, better known as agave. She fell in love with Quetzalcoatl, the god who created humans, and they decided to run away together, which incited the fury of the goddess' brothers, who resolved to find her.
During the pursuit, both gods chose to transform themselves into the sacred plant Maguey to avoid detection. Unfortunately, Mayáhuel's brothers discovered it and destroyed it.
Quetzalcoatl regained his form, gathered the remnants of his beloved, and replanted her. He watered her every day with his tears. She could never return to her physical form, remaining eternally in spirit within the sacred Maguey, which today we consume in the form of mezcal.

The eternal debate: Is gin the same as ginebra? Gin originated first in the Netherlands, and years later, due to its tremendous success in Great Britain and further refinement of the technique, it came to be called Gin.
It's challenging to differentiate them since both beverages share the same foundation: juniper plays a key role in their aromatic composition. Juniper is present in their formulation, aroma, and flavor.

Tequila is a distilled spirit, meaning an alcohol that is distilled from agricultural material originating in Tequila, in the state of Jalisco.
Legend has it that a lightning storm struck an agave field, causing a fire and the subsequent vaporization of the agave bulbs, creating a sweet-tasting syrup that piqued the interest of the natives.
They discovered that by fermenting it, they could obtain a liquor with relaxing properties and a euphoric effect when consumed. It is thanks to these agave musts that, 300 years later, we can enjoy this beverage at our tables.
